Chef & Project Leader – Northern Norway Competence Center for Food (NKMAT)
Per Theodor Tørrissen is a trained chef with over twenty years of experience in the restaurant industry. He studied food and food culture at the university of Nesna in Norway as well as project management at Nord university.
Currently, Per Theodor Tørrissen is managing The North Norwegian food competence center. A center established by the Nordland County municipality dedicated to enhancing knowledge and skills related to food in Northern Norway. Located in Mosjøen and affiliated with Mosjøen upper secondary school, the center focuses on promoting anddeveloping the region’s unique food traditions and raw materials. The center also aims to foster innovation and development within the food sector, emphasizing the use of local ingredients and sustainable practices. It serves as a hub for education, research, and collaboration among chefs, food producers, and other stakeholders in the food industry.
One of the centers most important initiatives is the ArktiskMat concept. an annual food symposium held in Mosjøen, Norway. It serves as a meeting place for both young and established chefs, as well as other food enthusiasts, who are interested in the culinary traditions and innovations of the Arctic region. The event features talks, workshops, demonstrations, and meals, all centered around the theme of sustainable Arctic cuisine.
The symposium also includes roadshows that travel throughout Norway, Europe, and beyond. Tørrissen has played a pivotal role in launching the world’s first vocational education program dedicated to sustainable food experiences at Nordland fagskole. This program aims to address global climate and environmental challenges by promoting sustainable culinary practices. Since 2024, he has contributed his expertise as an IGCAT Expert.
