Mikkel is 27 years old and studied gastronomy at Silkeborg Hospitality College in Central Denmark Region. He was trained at the restaurant CANblau – Tapas bar & Cantina; a restaurant that helped to renew the gastronomic arena in the city of Aarhus. After operating within the Spanish cuisine, Mikkel moved on to the recognized and historic Danish restaurant and resort established in 1923, Molskroen. Today, he is chef at one out of the three Michelin star awarded restaurants in Central Denmark Region, Restaurant Substans, which focuses on taste, solid craftsmanship and organic ingredients from local producers.
