Il a \u00e9tudi\u00e9 l\u2019alimentation et la culture alimentaire \u00e0 l\u2019universit\u00e9 de Nesna en Norv\u00e8ge ainsi que la gestion de projet \u00e0 l\u2019universit\u00e9 du Nord. Actuellement, Per Theodor T\u00f8rrissen dirige le centre de comp\u00e9tences alimentaires du nord de la Norv\u00e8ge. Un centre cr\u00e9\u00e9 par la municipalit\u00e9 du comt\u00e9 de Nordland d\u00e9di\u00e9 \u00e0 l\u2019am\u00e9lioration des connaissances et des comp\u00e9tences li\u00e9es \u00e0 l\u2019alimentation dans le nord de la Norv\u00e8ge. Situ\u00e9 \u00e0 Mosj\u00f8en et affili\u00e9 \u00e0 l\u2019\u00e9cole secondaire sup\u00e9rieure de Mosj\u00f8en, le centre se concentre sur la promotion et le d\u00e9veloppement des traditions alimentaires et des mati\u00e8res premi\u00e8res uniques de la r\u00e9gion. Le centre vise \u00e9galement \u00e0 favoriser l\u2019innovation et le d\u00e9veloppement dans le secteur alimentaire, en mettant l\u2019accent sur l\u2019utilisation d\u2019ingr\u00e9dients locaux et de pratiques durables. Il sert de plaque tournante pour l\u2019\u00e9ducation, la recherche et la collaboration entre les chefs, les producteurs d\u2019aliments et d\u2019autres parties prenantes de l\u2019industrie alimentaire. L\u2019une des initiatives les plus importantes du centre est le concept ArktiskMat. un symposium annuel sur l\u2019alimentation qui se tient \u00e0 Mosj\u00f8en, en Norv\u00e8ge. Il sert de lieu de rencontre pour les chefs jeunes et \u00e9tablis, ainsi que pour d\u2019autres passionn\u00e9s de cuisine, qui s\u2019int\u00e9ressent aux traditions et aux innovations culinaires de la r\u00e9gion arctique. L\u2019\u00e9v\u00e9nement comprend des conf\u00e9rences, des ateliers, des d\u00e9monstrations et des repas, tous centr\u00e9s sur le th\u00e8me de la cuisine durable de l\u2019Arctique. Le symposium comprend \u00e9galement des tourn\u00e9es de pr\u00e9sentation qui parcourent toute la Norv\u00e8ge, l\u2019Europe et au-del\u00e0. T\u00f8rrissen a jou\u00e9 un r\u00f4le central dans le lancement du premier programme de formation professionnelle au monde consacr\u00e9 aux exp\u00e9riences alimentaires durables \u00e0 la fagskole de Nordland.
