Chef autodidacte, Gaetano a commenc\u00e9 son parcours culinaire parmi les march\u00e9s traditionnels de sa ville natale de Palerme, fortement influenc\u00e9 par les odeurs, les saveurs et les sons de la gastronomie sicilienne. Dans le but d\u2019accro\u00eetre ses comp\u00e9tences professionnelles, il a commenc\u00e9 \u00e0 voyager \u00e0 un tr\u00e8s jeune \u00e2ge pour explorer diff\u00e9rentes r\u00e9alit\u00e9s et acqu\u00e9rir de nouvelles connaissances. Apr\u00e8s un premier arr\u00eat \u00e0 la Taverna Estia \u00e0 Naples, 2 \u00e9toiles Michelin, il s\u2019installe d\u2019abord \u00e0 Londres pour travailler au restaurant Ledbury, puis \u00e0 Paris, o\u00f9 il a l\u2019occasion d\u2019apprendre aupr\u00e8s de ma\u00eetres de la cuisine fran\u00e7aise tels que Robuchon et Pacaud. C\u2019est dans l\u2019environnement international parisien et gr\u00e2ce \u00e0 son exp\u00e9rience professionnelle au Ritz, qu\u2019il a d\u00e9velopp\u00e9 la recherche constante de la perfection technique et l\u2019attention port\u00e9e \u00e0 la qualit\u00e9 des mati\u00e8res premi\u00e8res qui caract\u00e9risent sa cuisine. En 2022, apr\u00e8s avoir suivi un programme de master en leadership et commerce dans l\u2019h\u00f4tellerie 2.0 \u00e0 la Mad Academy (Copenhague), Gaetano a d\u00e9cid\u00e9 de retourner \u00e0 Palerme et d\u2019assumer la t\u00e2che ambitieuse de projeter le restaurant Charleston dans l\u2019avenir. Il estime qu\u2019en tant que chef, il est crucial d\u2019accorder beaucoup d\u2019attention aux mati\u00e8res premi\u00e8res en recherchant des \u00e9leveurs, des p\u00eacheurs, des agriculteurs, des fromagers qui ont fait de la qualit\u00e9 leur priorit\u00e9 absolue. Quelque chose qu\u2019il applique quotidiennement dans son travail, en s\u2019effor\u00e7ant de cr\u00e9er un chemin entre la technique et la connaissance, dans le but d\u2019offrir un avant-go\u00fbt d\u2019une v\u00e9ritable exp\u00e9rience sicilienne, r\u00e9sultant de la symbiose entre l\u2019art et l\u2019artisanat. Une cuisine instinctive o\u00f9 la rigueur et la technique sont les bases essentielles pour s\u2019amuser et laisser place \u00e0 l\u2019improvisation en cuisine.
