En tant que chef international, Paul a dirig\u00e9 des \u00e9quipes de chefs pour certains des plus grands noms mondiaux de l\u2019industrie h\u00f4teli\u00e8re. Ayant pass\u00e9 une grande partie de sa carri\u00e8re \u00e0 l\u2019\u00e9tranger, en particulier sur le continent africain, la cuisine de Paul est fortement influenc\u00e9e par les saveurs de toute l\u2019Afrique, ainsi que de la M\u00e9diterran\u00e9e. Fervent d\u00e9fenseur de la provenance des aliments et du mouvement Slow Food, le fait de s\u2019installer \u00e0 la ferme Errichel dans le Highland Perthshire pour \u00e9tablir son \u00ab Thyme Deli &amp; Bistro \u00bb a permis \u00e0 Paul de mettre sa philosophie en action, avec du b\u00e9tail indig\u00e8ne de race rare \u00e9lev\u00e9 de mani\u00e8re \u00e9thique, notamment des bovins Shetland, des moutons Shetland et de grands porcs noirs, utilis\u00e9s dans de nombreux plats servis au Thyme. Paul est \u00e9troitement impliqu\u00e9 dans le travail de la ferme Errichel, son projet le plus r\u00e9cent \u00e9tant la cr\u00e9ation d\u2019un nouveau verger Slow Food \u00ab Arche du go\u00fbt \u00bb compos\u00e9 de pommiers indig\u00e8nes et patrimoniaux. Paul produit \u00e9galement une gamme d\u2019aliments prim\u00e9s, notamment du biltong et du pastrami \u00e9lev\u00e9s \u00e0 la maison, ainsi que des cornichons, des conserves et des chutneys prim\u00e9s, dont beaucoup ont obtenu des \u00e9toiles de l\u2019organisation britannique \u00ab&nbsp;Great Taste&nbsp;\u00bb, dont plusieurs ont obtenu la triple \u00e9toile, la plus haute distinction de Great Taste.
