Son int\u00e9r\u00eat pour la cuisine grandissait de plus en plus, ainsi que sa fascination pour ce qu\u2019est la nourriture et ce qu\u2019elle pourrait \u00eatre. Apr\u00e8s quelques ann\u00e9es \u00e0 travailler dans diff\u00e9rents restaurants et \u00e0 cuisiner sur des yachts en M\u00e9diterran\u00e9e, il \u00e9tait pr\u00eat \u00e0 rentrer chez lui. En 2017, il a commenc\u00e9 \u00e0 construire le restaurant N\u00e4stg\u00e5rds sur la ferme de ses parents et a ouvert ses portes en 2019. N\u00e4stg\u00e5rds (un jeu de mots qui se traduit approximativement par courte distance ou ferme voisine) propose un menu de 10 plats \u00e0 base de produits de saison et de viande cultiv\u00e9e sur place et dans les fermes voisines. De nombreux plats incorporent diff\u00e9rentes mauvaises herbes et plantes sauvages cueillies dans la r\u00e9gion afin d\u2019exprimer la saveur du J\u00e4mtland. La principale raison pour laquelle Johan s\u2019est senti pouss\u00e9 \u00e0 cr\u00e9er son propre \u00e9tablissement \u00e9tait d\u2019exprimer pleinement ce qu\u2019il ressentait \u00e0 propos de l\u2019industrie alimentaire. Son objectif est de pouvoir donner aux ingr\u00e9dients le respect et la r\u00e9v\u00e9rence qu\u2019ils m\u00e9ritent, et de prouver qu\u2019il est possible de cuisiner d\u2019une mani\u00e8re sophistiqu\u00e9e, famili\u00e8re, mais surprenante pour les invit\u00e9s. Il souhaite offrir un lieu de travail inclusif o\u00f9 chacun est \u00e9cout\u00e9, respect\u00e9, heureux et inspir\u00e9 \u00e0 exp\u00e9rimenter et \u00e0 \u00e9voluer. Bref, une approche plut\u00f4t holistique : respect de l\u2019humain, du b\u00e9tail et des produits. Johan a r\u00e9cemment ouvert Bua, un petit bistrot \u00e0 \u00d6stersund \u00e0 l\u2019atmosph\u00e8re chaleureuse et accueillante. Avec un accent particulier sur les vins biologiques, le restaurant propose \u00e9galement des produits locaux et de la viande.
