Enfant, elle aimait s\u2019amuser dans la cuisine o\u00f9, plus d\u2019une fois, elle finissait par \u00ab trop brunir \u00bb ses aliments, obligeant sa famille \u00e0 manger tout ce qui avait un go\u00fbt l\u00e9g\u00e8rement amer, entour\u00e9 d\u2019une douce brume&#8230; Et non, ce n\u2019\u00e9tait pas de l\u2019azote liquide ! C\u2019est \u00e0 ce moment-l\u00e0 que ses parents ont d\u00e9cid\u00e9 qu\u2019il \u00e9tait temps de la laisser s\u2019installer \u00e0 Barcelone pour \u00e9tudier (Minorque n\u2019avait pas d\u2019\u00e9cole h\u00f4teli\u00e8re \u00e0 l\u2019\u00e9poque). Elle a eu l\u2019honneur de faire partie de la premi\u00e8re promotion dipl\u00f4m\u00e9e de l\u2019\u00e9cole de cuisine Hofmann. C\u2019est pr\u00e9cis\u00e9ment l\u00e0 que son int\u00e9r\u00eat pour la cuisine est devenu une passion.<\/p>\n<p>Apr\u00e8s s\u2019\u00eatre form\u00e9s dans plusieurs cuisines, Silvia et son partenaire, Toni Tarrag\u00f3 \u2013 \u00e9galement dipl\u00f4m\u00e9 de l\u2019\u00e9cole Hofmann \u2013 ont d\u00e9cid\u00e9 d\u2019ouvrir leur propre restaurant : En Tast de na Silvia. Depuis 21 ans, ils s\u2019emploient \u00e0 r\u00e9cup\u00e9rer des recettes traditionnelles, des vari\u00e9t\u00e9s v\u00e9g\u00e9tales et animales autochtones et \u00e0 revaloriser un patrimoine alimentaire oubli\u00e9.<\/p>\n<p>Son amour pour sa terre, Minorque, a \u00e9t\u00e9 le principal moteur de ses efforts pour obtenir le certificat de restaurant Slow Food Km0 (le seul restaurant des \u00eeles Bal\u00e9ares \u00e0 d\u00e9tenir cette reconnaissance), la certification de r\u00e9serve de biosph\u00e8re de Minorque et 4 \u00e9toiles en tant que restaurant sans plastique des Bal\u00e9ares. \u00c0 travers son restaurant, Silvia s\u2019engage constamment \u00e0 contribuer \u00e0 une \u00eele plus durable et \u00e0 soutenir l\u2019\u00e9conomie circulaire, comme par exemple en s\u2019approvisionnant \u00e0 90 % localement.<\/p>\n<p>Sur le plan personnel, elle est fi\u00e8re d\u2019\u00eatre ambassadrice officielle de Minorque, r\u00e9gion europ\u00e9enne de la gastronomie r\u00e9compens\u00e9e en 2022.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Silvia Anglada est n\u00e9e \u00e0 Ciutadella \u00e0 Minorque.
