Elle est associ\u00e9e dans une \u00e9cole de design coop\u00e9ratif et durable \u00e0 Saint-Malo (Institut Sup\u00e9rieur de Design de Saint-Malo), professeure associ\u00e9e \u00e0 Sciences Po Rennes et Ferrandi Paris.<\/p>\n<p>Sa th\u00e8se de doctorat publi\u00e9e en 2017 s\u2019intitule : \u00ab Un mix marketing et design culinaire pour un consommateur ravi. Cette th\u00e8se a \u00e9t\u00e9 r\u00e9compens\u00e9e par l\u2019Association pour la recherche agro-\u00e9conomique d\u2019AgroParisTech en 2018 et une partie de ces travaux ont \u00e9t\u00e9 publi\u00e9s dans son \u00ab Grand livre du marketing culinaire \u00bb, aux \u00e9ditions Dunod en 2019.<\/p>\n<p>N\u00e9e et \u00e9lev\u00e9e dans un restaurant \u00e9toil\u00e9 en Bretagne, Virginie a \u00e9pous\u00e9 un p\u00eacheur malouin avec qui elle a cr\u00e9\u00e9 un petit restaurant durable sur le pont du port (la Cabane \u00e0 Manger) en 2020. Aujourd\u2019hui, elle est conceptrice de syst\u00e8mes alimentaires pour les territoires (R\u00e9gion Bretagne), les entrepreneurs et les programmes d\u2019apprentissage.
