Entour\u00e9 de saveurs et de go\u00fbts diff\u00e9rents, il a appris les techniques de base de la cuisine d\u00e8s son enfance. \u00c0 l\u2019\u00e2ge de treize ans, il devient apprenti cuisinier aupr\u00e8s de ses parents. Apr\u00e8s avoir obtenu son dipl\u00f4me \u00e0 l\u2019\u00e9cole culinaire, il a commenc\u00e9 sa carri\u00e8re professionnelle aupr\u00e8s de son mentor le chef Georgios Troumouchis o\u00f9 il l\u2019a guid\u00e9 et inspir\u00e9 tout au long de sa carri\u00e8re. La carri\u00e8re de Stamatios a commenc\u00e9 \u00e0 prendre forme dans diff\u00e9rents restaurants \u00e9toil\u00e9s Michelin pour lesquels il a travaill\u00e9, o\u00f9 il a d\u00e9velopp\u00e9 sa vision moderne et minimaliste de l\u2019exp\u00e9rience culinaire. Il s\u2019est \u00e9galement int\u00e9ress\u00e9 de tr\u00e8s pr\u00e8s \u00e0 la cuisine nordique et aux techniques de fermentation.<\/p>\n<p>Il est aujourd\u2019hui chef cuisinier au restaurant gastronomique Noble \u00e0 Rhodes, o\u00f9, inspir\u00e9 par la tradition et le caract\u00e8re unique de son pays natal, il a cr\u00e9\u00e9 un menu qui raconte l\u2019histoire d\u2019un quotidien oubli\u00e9, afin de d\u00e9clencher des \u00e9motions et de r\u00e9veiller des souvenirs. Il place les racines de sa terre dans une palette diff\u00e9rente et aborde la tradition d\u2019une mani\u00e8re innovante et non conventionnelle. Stamatios a remport\u00e9 le premier prix du concours gr\u00e2ce \u00e0 son plat Salas, issu des mots grecs thalassa (mer) et h\u00e1las (sel).
