Ses recherches portent sur l\u2019apparition de la cuisine r\u00e9gionale en France (19e-20e<sup>si\u00e8cles<\/sup>), sur la construction historique du concept de terroir et sur l\u2019av\u00e8nement des notions de patrimoine gastronomique\/culinaire.<sup><\/sup> Il s\u2019int\u00e9resse \u00e9galement aux habitudes alimentaires en Europe occidentale (France, Grande-Bretagne, Italie) aux XVIe et XVIIe si\u00e8cles.<\/p>\n<p>Il a particip\u00e9 \u00e0 l\u2019inventaire du patrimoine alimentaire fran\u00e7ais (<em>Inventaire du patrimoine culinaire de la France. R\u00e9gion Centre<\/em>, France, Albin Michel, 2012) et a particip\u00e9 \u00e0 l\u2019inscription du <em>Repas gastronomique des Fran\u00e7ais<\/em> sur la liste du patrimoine culturel immat\u00e9riel de l\u2019UNESCO.
