Il a \u00e9t\u00e9 form\u00e9 au restaurant CANblau &#8211; Tapas bar &amp; Cantina&nbsp;; un restaurant qui a contribu\u00e9 \u00e0 renouveler l\u2019ar\u00e8ne gastronomique de la ville d\u2019Aarhus. Apr\u00e8s avoir travaill\u00e9 dans le domaine de la cuisine espagnole, Mikkel s\u2019est dirig\u00e9 vers le restaurant et centre de vill\u00e9giature danois reconnu et historique cr\u00e9\u00e9 en 1923, Molskroen.
