Thiam a d\u00e9m\u00e9nag\u00e9 \u00e0 New York \u00e0 la fin des ann\u00e9es 1980 o\u00f9 il a commenc\u00e9 \u00e0 travailler dans un certain nombre de restaurants. Au d\u00e9but de l\u2019ann\u00e9e 2000, il a ouvert son premier restaurant, Yolele, un bistrot africain visionnaire \u00e0 Fort Greene, Brooklyn. Son deuxi\u00e8me point de vente, Le Grand-Dakar Restaurant, a suivi, ouvrant ses portes dans la ville voisine de Clinton Hill trois ans plus tard. il est rapidement devenu un lieu culinaire et culturel pour les Africains du continent et de la diaspora.<br \/>\nIl est actuellement propri\u00e9taire de Pierre Thiam Catering, qui initie une client\u00e8le new-yorkaise diversifi\u00e9e et avis\u00e9e \u00e0 des interpr\u00e9tations contemporaines de saveurs ethniques ; il est \u00e9galement chef consultant pour un certain nombre de restaurants de la ville et d\u2019ailleurs.<\/p>\n<p>Lorsqu\u2019il n\u2019est pas dans sa propre cuisine, Thiam donne r\u00e9guli\u00e8rement des conf\u00e9rences et des cours de cuisine dans des lieux tels que l\u2019Institute for Culinary Education (ICE), l\u2019International Culinary Center (ICC), l\u2019Universit\u00e9 de Boston (BU), l\u2019Universit\u00e9 de New York, The New School ou The Natural Gourmet.<br \/>\nSur le plan mondial, en 2011, dans le cadre d\u2019un programme parrain\u00e9 par le d\u00e9partement d\u2019\u00c9tat, il a dirig\u00e9 un symposium de l\u2019Universit\u00e9 centrale de Caroline du Nord sur l\u2019influence de la nourriture africaine en Am\u00e9rique latine. En mai 2012, Thiam a \u00e9t\u00e9 chef invit\u00e9 \u00e0 la Biennale de La Havane (Cuba), et en juin 2012, il a re\u00e7u le prix du d\u00e9veloppement du tourisme responsable de l\u2019African Travel Association \u00e0 Victoria Falls, au Zimbabwe (Afrique australe).<br \/>\nAu printemps 2013, il a fait d\u00e9couvrir \u00e0 des personnalit\u00e9s culinaires mondiales la complexit\u00e9 et la richesse de la cuisine africaine, en organisant et en animant un voyage \u00e0 Dakar pour une douzaine de chefs invit\u00e9s du monde entier. \u00c0 l\u2019automne 2014, \u00e0 Kinshasa (RDC), Thiam a pr\u00e9sent\u00e9 un menu sur le th\u00e8me \u00ab Cultures africaines sous-utilis\u00e9es \u00bb pour les d\u00e9l\u00e9gu\u00e9s de l\u2019Organisation des Nations Unies pour l\u2019alimentation et l\u2019agriculture (FAO) et de l\u2019Union africaine (UA). En novembre 2014, Thiam a \u00e9t\u00e9 conf\u00e9rencier invit\u00e9 au Congr\u00e8s mondial de l\u2019African Travel Association \u00e0 Kampala, en Ouganda. En janvier 2015, Thiam a \u00e9t\u00e9 le chef invit\u00e9 du Mus\u00e9e royal de l\u2019Ontario (ROM) \u00e0 Toronto (Canada).<br \/>\nSon premier livre de cuisine, Yolele&nbsp;! Recipes from the Heart of Senegal (Lake Isle Press, 2009), a \u00e9t\u00e9 finaliste pour le Julia Child Cookbook Award, 2009, d\u00e9cern\u00e9 par l\u2019Association internationale des professionnels culinaires (IACP) \u00e0 Denver.
