He was trained at the restaurant CANblau &#8211; Tapas bar &amp; Cantina; a restaurant that helped to renew the gastronomic arena in the city of Aarhus. After operating within the Spanish cuisine, Mikkel moved on to the recognized and historic Danish restaurant and resort established in 1923, Molskroen.
